On the Menu: Lentil "Meat"balls

These are a staple in our house! The mix can also double as a great "meat"loaf served with a tomato or mushroom gravy. We usually serve these lentil balls with brown rice pasta and fresh tomato sauce with some veggies on the side. Enjoy!

Lentil "Meat"balls

2 cups cooked lentils (a can of lentils will work here, make sure to rinse them really well)
1 medium onion, finely chopped
1/2 cup grated cheddar cheese
1/2 cup cooked spinach
1 egg, beaten
1/4 cup bread crumbs
1 tbsp garlic powder
1 tbsp chili powder
Salt and pepper

Preheat oven to 375. Combine all ingredients in a large bowl. Form mix into 2 inch balls and bake at 375 for 20 minutes or until balls start to get crispy. That's it!

This recipe is a snap and can easily be made on a busy night. The balls also freeze well!
